7U Lemon Camp Muffins

Camping -without losing a day packing...

When we started renting out our furnished wall tents, we learned a lot from our campers.  One of the biggest things we heard, was how nice it was to 'skip the drama' of packing for a camping trip and have everything ready and waiting for their arrival.  Especially, when they wanted a short get-away and didn't have time to waste on the preparation.

We also made some wrong assumptions.  We started out by making the assumption that everyone would want to make their own coffee in the mornings.  We assumed wrong. (for the most part) :)

So, we began asking questions and really trying to listen.  What we heard, was that it would be nice to have coffee ready for them at the time they chose, but still have some morning privacy.

So, Seth and Liam got to work on some beautiful milled Idaho Walnut trays for me, to the specs I requested. They turned out amazing! We wanted our guests to feel extra special when they received their coffee tray in the morning!

Every morning we serve a coffee/tea tray to our campers, staying in our furnished wall tents on the ranch. We leave their tray in the store at the time they choose, so they still have their morning privacy!

On the tray, we serve organic coffee or herbal tea (grown on the ranch), along with our organic Lemon muffins, cream from our Jersey cows and our 100% pasture- fed butter made from our cream.

Almost every time, when our campers leave, someone asks for our muffin recipe, so I wanted to make it available to everyone.

Organic Lemon Camp Muffins
​(w/ gluten-free options)

Here's what you'll need:
  • 2-1/2 C Organic White Flour (if you choose to use ALL gluten free blend below, add 1-1/2 tsp guar gum to hold together)
  • 1-1/2 C Mama's Brand, Coconut Gluten- Free Flour Blend
  • 2 C Organic Evap. Cane Juice Crystals (Sugar)
  • 1 tsp Himalayan Sea Salt
  • 4 tsp Baking Powder
  • 4 Eggs
  • 1 C Organic Sunflower Oil
  • 35 drops quality lemon Essential Oil (we use Doterra, or Revive brands)
  • 1 Cup Raw Milk
To begin:
Mix together flours, sugar, sea salt and baking powder in a bowl.  
Next:
Make a well in the center of the dry ingredients and drop in eggs.  Take a fork and lightly whisk eggs while setting on dry mixture.
Pour:
Oil, milk and essential oil on eggs.
Stir:
together with a fork, just until blended.  Some flour will not be stirred in all the way, but mostly.  (that's how you want it)
Scoop into muffin cups.  Bake at 400 degrees for 15 min -regular muffin cups, 20 -22 min - large muffin cups.
Cool and serve.
