How to make Ranch Egg Burritos In Homemade Tortillas

It wasn't that long ago that I thought meals could only be healthy if they took hours to prepare.


Long periods of time would have to be set aside, if I wanted my family to eat meals that could give them the energy and the clear thinking they needed to do all that they were made to do...right?
...Not entirely true.

Like you, we are a busy family and have lots on our 'to do' plate, so I knew that hours of prep every day, just wouldn't happen in spite of my intentions. After lots of practice, study and listening to those wise women who have worked at this for much longer than I had, I realized that there are simple steps to condensing the prep that goes into really good foods.   And we don't have to compromise our commitment to feed our families quality foods they can digest.

Some meals are just going to take longer than others, but I set aside a few recipes that are my 'fast food' options, for those days when I just need something easy and quick. But, I can be confident it will still leave my family feeling energized.

One of my favorite quick recipes is our Ranch Egg Burritos. Start to finish, I can have this on plates and ready to eat in 30 minutes and that includes the best homemade tortillas you will ever eat.

That's right, I said make the ranch egg filling AND the burritos in 30 minutes!

Eggs ~ are one of the most healthful foods you can eat. According to Dr. Mercola, proteins are found in all types of foods, but only foods from animal sources, such as eggs, meat and raw milk are complete proteins, meaning they provide the 8 essential amino acids.
                                                                                                                                                                                                              Studies have found that eggs from hens that have truly been raised on pasture have 2/3 more vitamin A, 3 times more vitamin E, 2 times more omega 3 fatty acids and 7 times more beta carotene than eggs from commercially raised hens.

I know, it's so confusing to find the right eggs with all of the different labels, loop holes and ever changing definitions associated with "organic," "free-range,"  "pastured" and "cage-free," and that's why it's so important to find a farmer who can answer your questions about how they raise their foods. Using that information, you get to choose who raises your food. Knowing how your food is raised and where it comes from is the easiest start to taking control of your health.

No need to be intimidated by the tortillas!  You can easily do it.  They really are easy and you just have to dive in and try them.   They have a wonderful texture and flavor, not to mention...they don't fall apart, thanks to the guar gum that is included!  Need any help, just ask!   Raini ~ raini@7u-ranch.com

Tortillas~
What you will need:

• 3 cups Spelt Flour (this can be whole spelt, white, sprouted flour, wheat or gluten free blend 
• 1 tsp Sea Salt (I use Himalayan or Celtic) need some?
• 1 tsp baking powder (aluminum free is best)
• 1/2 tsp guar gum or xantham gum
• 1 tsp cream of tartar
• 1/3 cup olive oil
• 1 cup warm water (It is important that it is very warm)
In a bowl, combine flour, sea salt, baking powder,  guar gum and cream of tartar. (It is really important to mix guar gum in the dry mixture or it will clump and won't do it's job) Mix well.
Add olive oil and warm water. Stir well. Knead until soft. (If too wet, add a little more flour – your goal is to create a soft dough) Pinch small balls of dough off and roll into a circle about an 1/8th inch deep - Don't worry! They don't have to look perfect.  Sometimes mine end up in some pretty funny looking shapes ;)  Cook about one minute on each side in a cast iron pan over medium
heat.
Filling:

Fill with scrambled ranch eggs and a dollop of raw cream top yogurt from our store.

Other filling ideas:

~Sizzling strips of pasture-fed meat and red peppers topped with  cream top yogurt from our store.

~Cook down seasoned pasture-fed Roast from our store, in your crock pot until tender.  Pull apart and place in tortillas with raw cheddar and hot sauce

~Saute pasture-fed, ground beef from our store, in pan.  Add refried beans and olives.  Top with 7U ranch cream top yogurt


Tips and tricks:
1)If you are like us and don't tolerate wheat well, try using spelt flour or a gluten free blend.  If you would like to replace the flour with whole wheat, sprouted flour or gluten free blends~ Do it!  I have tried many different flours and they all work. 

2)If you are using a gluten free flour, make sure you add enough guar gum to bind it.
