7 U Ranch Style - Pork Fried Rice

9/12/2017

Okay, so you might not find this version in your local Chinese Restaurant, but I kinda think that it's WAY better! It's a really satisfying dish that can do just fine on its own, or equally as well as a side dish.

This dish is too good to waste time just talking about it, so let's get started...

Note: This recipe feeds my family of 5, but it can easily be cut in half for less servings. Plus! The left overs are excellent cold.

What you will need...
~ 8 to 9 cups cooked rice (3 cups uncooked)
~ 1 package uncured bacon ( sliced pork bellies)
~ 1 purple onion, diced
~ 4 cloves garlic, minced
~ pinch cayenne pepper
~ organic soy sauce ( make sure it's made by fermentation)
~ 4 eggs
~ sea salt ( to your taste preference)

To Prepare...

1) Season with sea salt ,and black pepper, then fry sliced pork bellies and chop into small pieces. Hint: I wanted a little smokey flavor, this time so I slow cooked them on the Grill.

2) Place pork bellies, onion and garlic on fry pan and sauté until onion and garlic have softened.

3) Add cooked rice and sprinkle soy sauce over the top. Turn over and gently stir from time to time, until flavors are well blended and the rice loses some of its moisture.

4) Last, crack 4 eggs over the top and prick with a fork. Cover and stir every few minutes until combined and eggs are fully cooked. Be careful not to over stir.

This serves my family of 5 (with growing teenagers) as a main dish, but can be cut in half, if desired.

Serve topped with micro greens. (We got these from Mountain Roots Orchards! Aren't they beautiful?)

How To Make Nourishing Bone Broth

9/12/2017

Bone broth is a staple in our home, especially during the winter months. It is so nourishing and satisfying, not to mention, a super great ingredient to have on hand for many recipes calling for broth.

If you ever feel down in the winter time, or feel under the weather, this will pick you up. If you like spicy things - add cayenne, it is great for circulation! The garlic helps to strengthen your immune system along with the help of oregano.

Lets get started...

~Nourishing Bone Broth~

What you will need...
~ 2 to 4 lbs Osso Bucco sliced shank (or other marrow and knuckle bones)
~ 1/2 cup raw apple cider vinegar
~ 4 quarts of water
~ 4 carrots (cut in half)
~ 4 celery ribs (cut in half)
~ 1 onion (quartered)
~ 4 to 5 cloves garlic (whole)
~ sea salt ( to your taste preference)
~ 1 TBS dried oregano ( or use some fresh, if you have it)

To Prepare...

1) place Osso Bucco sliced shank in a crock pot and pour Raw Apple Cider Vinegar over bones.

2) Add water and allow to sit for 45 minutes to 1 hour. This allows the vinegar to start pulling the minerals from the bones and into the water.

3) Add more water, if needed to cover the bones.

4) Add remaining ingredients and cook on on low setting for 24 to 72 hours. ( or until bones become soft). ( make sure to scrape marrow from bones and into broth for full benefits of the broth.

Sip as is, add pasta or rice and serve, or store in the freezer for use in recipes.
